Chicken Cordon Bleu

One of my husbands most favorite dishes is chicken cordon bleu, so I decided to give it a try! I will say, it came out pretty damn good! This dish is definitely not the most healthy, but it's a nice comfort food.

Ingredients
  • 4 skinless, boneless chicken breast halves
  • 4 slices Swiss cheese
  • 4 slices ham
  • 2 tablespoons all-purpose flour
  • 3/4 teaspoon paprika
  • 1/4 cup butter
  • 1/3 cup dry white wine
  • 3/4 teaspoon chicken bouillon granules
  • 2 teaspoons cornstarch
  • 2/3 cup heavy whipping cream


  • 1) Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.

  • 2) Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.

  • 3) Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and 
  • pour over the chicken. Serve warm.

Broiled Parmesan Tilapia

Tilapia: Take 2!

I had leftover tilapia from my fish tacos so I decided to try and broil it for lunch! Serve with a fresh summer salad for a nice healthy, light meal!

Ingredients:
1-2 tilapia filets
1 Tbs grated parmesan cheese
2 Tbs melted butter
1 Tbs lemon juice
Dried Basil (eyeball to your liking)
Black Pepper (eyeball to your liking)
Onion Powder (eyeball to your liking)

1) Preheat your ovens broiler. Line a pan with aluminum foil.

2) In a small bowl mix together all ingredients, except tilapia. 

3) Place tilapia on pan and season with salt and pepper. Broil for 3 minutes, flip and continue to cook for another 3 minutes.

4) Remove tilapia from oven and cover with parmesan cheese mixture, return to oven and continue to cook for 2 minutes or until topping is browned. Serve!

Fish Tacos

I have been out of the game for a little while! I'm happy to share some new recipes with all of you!

Today, we have Baja style fish tacos.

The only change I made to this was, I halved everything since I was only cooking for 2 people. Even with halving the recipe, we still only ate half. I still have 1/2 pound of tilapia left! We also had A LOT of white sauce left, but we don't like to use too much anyway.

*Reminder* 
Substitute for low fat wherever you can. Low fat Cheese, sour cream, mayo and use as little oil as needed for frying your fish. You usually do not nearly as much as a recipe calls for.
