Beef Roast with Belgian Beer & Onion Braising Base

YUMMY! I haven't had a pot roast similar meal in a long time and it was super good! Lately my husband and I have been SO busy I haven't had time to make any new dinners, so I'm glad today we got to try something different! We tried a new sauce we got as a gift (Thanks Meg), it turned out VERY good, I highly recommend it. 

Next time i think we may combine the beef, sauce, carrots, and potatoes all in one crock pot and eat it as a stew with some sourdough!

Ingredients
3-4 lbs beef round roast
1 jar of Belgian Beer & Onion Braising sauce sold here
1 Tbs Olive Oil

Can of Corn

Mashed Potatoes
-3 potatoes
-garlic
-parsley
-salt
-pepper
-1/4 cup fat free milk
-4 Tbs butter
-4 Tbs low fat sour cream
-1 Tbs blue cheese

Beef
1. Cut round roast into 1 inch cubes
2. Heat oil in large skillet
3. Brown all sides of beef (about 8-10) minutes
4. Place beef in slow cooker and top with Braising Sauce
5. Cook on low for 8 hours

Potatoes
1. Wash, peel, & cut potatoes into small cubes
2. Boil potatoes, once tender, drain and set aside
3. In same pan, combine milk, butter, and blue cheese until all melted
4. Add potatoes and salt, pepper, garlic, parsley and sour cream
5. Mix all together and serve!

Taco Tuesday!

Taco Tuesday in the Lennox Casa! This was my first time making this and it came out great! Another great addition for ways to use the crock pot. You could do the tortillas two ways, either fried or not. My hubby wanted them fried and I wanted them warmed up! Both are tasty! 

Ingredients
1 pound of chicken tenders
1 large jar of salsa
Tortillas
Taco toppings of choice

-Combine chicken and Salsa in crock pot and cook and low for 8 hours.
-Shred chicken in crock pot and allow to sit for 1 hour in juices
-Place meat in tortilla and add toppings!

Pulled Pork Sandwiches

What better way to come home, than to come to dinner already made! I love the crock pot! I don't get much use out of it, I think I only have 3 recipes for it, but when I do use it, this BBQ pulled pork is a must! Yummy!

Ingredients
-Pork Loin
-2 bottles of Stubbs BBQ sauce (we do one original & one spicy)

Combine pork loin and BBQ sauce in crock pot and cook on low for 10 hours.
Serve on a bun with cole slaw & cheese!


After 10 hours...
