Chicken & Apple Salad

I love my salads jam packed with toppings! After a long work day followed by a run, there's nothing better than a light, tasty & filling salad! I also made yesterday's dish of chicken stuffed with broccoli & cheese for my husband! Happy Tuesday!

2 1/2 cups spring mix salad
1/2 sliced apple
2 tbs roasted corn
2 tbs sliced almonds
1 tbs blue cheese
1/4 sliced cucumber
2 tsp dressing of choice (I used Light Rasberry Walnut)
1/4 lb of cooked chicken
(I cooked it on a skillet with salt, pepper, & McCormick's chicken seasoning)

Chicken Stuffed with Broccoli & Cheddar Cheese

My hubby went to dinner with his guys so I decided to try something new! I LOVED how it came out! A new dish to add to my arsenal! The directions are only for 1 serving, so double it if you'd like to make for multiple people!

Ingredients
1 chicken breast
1 egg
2 tbs water
1 cup seasoned bread crumbs
(I make my own with 1 slice wheat bread, parsley, garlic, salt & pepper)
2-3 florets cooked broccoli
1 slice cheddar cheese (or cheese of choice)

-Preheat oven to 350 degrees
-In a bowl, combine 1 egg, 2 tbs water and salt to taste. Beat mixture with fork and set aside.
-Cut chicken breast in half length wise and pound to flatten (if needed)
-Place 1/2 slice of cheese and broccoli on chicken, then roll and secure with toothpicks
-Dip rolled chicken in egg mixture, then bread crumbs and place on oiled cookie sheet
-Bake for 25 minutes

Goulash & Chocolate Covered Strawberries

My brothers came over tonight to watch the UFC fights so I cooked up some hearty goulash! I know the traditional goulash has potatoes in it, but my whole life my mom has called shell pasta and hamburger meat, goulash, SO I'm going with it. This is such a quick and easy meal and everyone always enjoys it.

Ingredients
Half box of Shell Pasta
1lb lean hamburger meat
1 jar of "Newman's Own" Sockarooni pasta sauce
sea salt, garlic salt & parsley to taste

-Cook pasta
-Cook hamburger meat with seasonings of choice
-Combine pasta, hamburger meat, & pasta sauce
-Serve!

I also made some chocolate covered strawberries. Just melt 1 cup of milk chocolate morsels and dip your clean and dried strawberries! They will all get eaten up!

Turkey Meatloaf

Tonight we had family over for dinner! Upon my husbands request, I made meatloaf. It came out so yummy! Even my father-in-law approved, and he is the meatloaf master! I added corn to the meatloaf, I got the idea from my BF Kara, it was a great addition! Served with steamed broccoli, red mashed potatoes, & salad. Follow the link below to try it yourself!

Healthy Chicken Pot Pie

MmMmmm Chicken Pot Pie! This recipe is such a great makeover on the heavy comfort food staple! My husband has a slight cold and it was raining when I got off work, so I figured it would be a perfect time to try a pot pie for the first time. This healthy pot pie has only 5oz of cream of chicken & 1/2 cup of nonfat chicken broth. Instead of making my own crust, I bought Pillsbury flaky biscuit dough. Worked perfect!

Stuffed Peppers

I love making this easy and light stuffed peppers recipe. They always come out great and you never feel guilty after eating them! Makes 4 servings (half a pepper is one serving). We usually have 2 halves and call it dinner, both halves only containing a combined total of 360 calories and 6 grams of fat! Can't beat that! Follow the link to try this dish yourself!

~TIPS~
1. no need to cook the rice before adding it to the mixture
2. Corn is a great additive
3. No need to use 3/4 cups of cheese! Even though it asks for low-fat cheese, that's a little excessive. I add 1 slice of cheddar cheese broken into pieces and that seems to work just fine.

Grilled Turkey Burgers with Roasted Red Pepper

Ground turkey has become a staple in our home. We use it to cook at least twice a week! On our honeymoon in Alaska, Scott had the best burger so we tried our best to re-create it. LOVE LOVE roasted red pepper on our burgers!



Roasted Red Pepper
1 red pepper
-Broil red pepper turning on each side until whole pepper is charred
-Place red pepper in a sealed tupperware for 10 minutes to moisten skin
-Take skin off red pepper & cut into desired pieces

Turkey Burger
1/2 Pound Turkey Meat
sweet mesquite seasoning
Garlic powder
Dried onion
-In a bowl, Season turkey meat with spices & form into 2 patties
-Grill for 7 minutes per side at 350-400 degrees

Our burger toppings consisted of blue cheese, grilled onions, avocado, red pepper & lettuce! Served with steamed broccoli and my oven baked fries!
