Toasted Ravioli with Marinara Dipping Sauce

A new twist to ravioli! This is a great alternative to fried ravioli and the marinara sauce is great with it! 4 raviolis equal 135 calories and 5 grams of fat! Not too shabby when paired with steamed veggies!

Ingredients

-Olive Oil cooking spray
-2 egg whites
-1/4 tsp sea salt, divided
-1/4 plus 1/4 tsp fresh ground pepper
-1/2 cup whole wheat bread crumbs
-1/4 cup grated Parmesan cheese
-1 tsp dried oregano
-1 tsp dried thyme
-Dash ground cayenne pepper
-1 9oz package cheese ravioli

SAUCE

-1/2 tbs olive oil
-1/2 yellow onion, chopped
-2 cloves garlic
-1/8 tsp red pepper flakes
-pinch dried oregano
-pinch dried thyme
-14 oz crushed tomatoes, unsalted
-1/2 tsp each sea salt and fresh ground pepper
-1 tbs balsamic vinegar
1 tbs fresh chopped oregano

1. Prepare Sauce. In medium sauce pan, heat oil on medium. Add onion and cook until golden brown. Add garlic, pepper flakes and pinch each dried oregano and thyme. Cook string frequently for 2 minutes. Add tomatoes, salt and pepper, bring to boil, then cover and simmer for 30 minutes. Add vinegar and fresh oregano, let simmer for 5 minutes. Remove from heat and let slightly cool.

2. With a blender, puree sauce until smooth. Transfer to a dipping bowl.

3. Preheat oven to 375 degrees. In small bowl, combine 2 egg whites, sea salt and pepper. In a second bowl, combine bread crumbs, salt, pepper, Parmesan cheese, 1 tsp dried oregano, 1 tsp thyme, and dash cayenne pepper. 

4. Dip ravioli in egg mixture then breadcrumb mixture until ravioli is fully coated. Place on greased cookie sheet and cook 18 minutes, flipping half way through. Serve with sauce!

Surf & Turf Kabobs

Salmon is my most favorite fish! I can eat it everyday....until i start to feel sick! Truth, I've done it before.

Tonight I tried grilled salmon kabobs with bok choy & for my husband, steak kabobs with onion and red pepper (he's not a fan of salmon)! Tonight I will be giving you the recipe for the "surf" portion of dinner.

Side note: I can't wait till Friday, work has been insane!

Ingredients
-1lb skinless salmon fillet, cut into 1 1/2 inch cubes
-1 cup baby bok choy
-1/3 cup reduced sodium soy sauce
-2 tbs brown sugar
-2 tsp grated fresh ginger
-dash of ground mustard

1. Thread salmon and bok choy on skewers and set aside
2. In a small saucepan, bring soy sauce, brown sugar and ginger to a boil, remove from heat and add ground mustard
3. Brush salmon liberally with sauce
4. Grill 5 minutes per side
5. Serve!

BBQ Chicken Pizza on Flat Bread

Tonight we tried flat bread pizza! I got the concept from my friends wonderful blog you can check out here! I wanted to try something a little more my husbands style so we went the BBQ chicken route! It was very tasty and light tasting! Serve with a spinach and apple salad and you've got a quick dinner!

Ingredients (for 3 pizzas)
3 flat bread pizzas
1/4 cup BBQ sauce (we used Stone Brewery Levitation)
1/2 cup mozorella
1 Tbs Asiago Cheese
1 Tbs blue Cheese
1/2 red onion sliced
1 cup of  cooked chicken covered with BBQ sauce
Parsley

1. Cook onion on medium heat until tender, set aside
2. Cover flat bread with 4 Tbs (or so) or BBQ Sauce, cheeses, onion, chicken, and parsley
3. Cook in oven for 8 minutes at 350 degrees.

There are SO many variations of pizza's you could do with flatbread. What a great way to get your pizza fix at a low fat cost!
